Vietnamese girl sells spring rolls causing a stir in Oklahoma

According to The Oklahoman , Ms. Vo, a 27-year-old Vietnamese woman, is the owner of the OKC Eggrolls brand, which specializes in selling spring rolls in Oklahoma City, which was established less than a year ago. Before that, she worked in the food industry for many years, but she never thought of selling her own food.

"From a young age, if you told me to make spring rolls to sell, I would react like 'no, my mom should be the one to open the shop'. And then somehow you step into your mother's path," Vo shared with The Oklahoman .

Last September, she got the chance to open her first spring roll pop-up at a beer hall thanks to a friend's recommendation. "It was crazy and things could have gone wrong, but after 10-15 pop-ups like that, we started to get the hang of it," she says.

These days, she opens pop-ups weekly and sometimes more often, creating menus that fit the venue, her capabilities and the theme she has in mind for the day. "People love spring rolls, but I feel like they want a little more and I also want to diversify my menu because a lot of the dishes on the menu are not just traditional Vietnamese dishes. I take a lot of influence from Japanese, Korean and Chinese culture when making some of the dishes," she said.

Pork and vegetarian spring rolls are always on the menu, but Vo has recently been serving pho, ramen, bento, and focaccia, an Italian-style bread, in different flavors, including "PHOccacia" (pho-flavored focaccia). Her plan for the near future is to operate a food truck that will be open until 2 a.m.
