The noodles in this dish are usually made from rice flour or tapioca flour, have moderate elasticity, and are usually smaller than those in other regions.
The broth is made from fish bones or pork bones, but is usually made from sea fish to create a natural aroma. The main highlight of the dish is chives, a type of vegetable with a distinctive aroma, which is chopped and dropped into the bowl of noodles. Chives not only bring a fresh green color but also make the dish more delicious. This dish is often served with steamed and fried fish cakes with a chewy, sweet texture made from fresh sea fish from Phu Yen. In addition, to enhance the flavor, this dish also has mackerel meat, fillets and sailfish loins.
Meanwhile, the cuisine of the martial arts land of Binh Dinh shows the generosity and richness of products from the fields to the sea.
