On April 4th, the Vice Chairman of the People's Committee of Can Tho City, Nguyen Thi Ngoc Diep, signed a document temporarily postponing the opening ceremony of the 12th Southern Traditional Cake Festival 2025, which was scheduled to take place that evening. The reason given was the ongoing national mourning period for the former Chairman of the Party and former President of Laos, Khamtay Siphandone.

The People's Committee of Can Tho City requests the Department of Culture, Sports and Tourism of the city to inform leaders, delegates and guests from the central government, provinces and centrally-administered cities, Can Tho City, the people, artisans, and tourists inside and outside the city about this matter.

At the same time, a document was issued announcing the adjustment of the schedule for activities within the framework of the Southern Traditional Cake Festival after the end of the two days of national mourning (April 4th and 5th).

According to the plan, this year's Southern Vietnam Traditional Cake Festival will take place from April 4th to 8th at Binh Thuy District Square. The festival will feature 231 booths, including a traditional cake space (118 booths); a regional specialty space (59 booths); and a food space (40 booths), with participation from 18 provinces and cities in the Mekong Delta region and other localities nationwide.

Two activities are considered the "highlights" of the festival. Firstly, the making of a "super-sized" Vietnamese pancake (banh xeo) with a circumference of 9 meters, filled with Muscovy duck meat, shrimp, and, notably, 100 Nha Trang lobsters. This is the largest banh xeo ever made, and larger than the giant banh xeo made at the Southern Vietnam Traditional Cake Festival in 2024.

Secondly, they made the largest banh chung (Vietnamese sticky rice cake) in the Mekong Delta to showcase to visitors. This cake measures 1.9m x 1.9m, is 0.8m thick, and was cooked by 20 artisans over 24 hours.
