How to cook squid noodle soup
Cook the broth
Wash the bones, blanch them in boiling water to remove the smell. Simmer the bones with about 2 liters of water for 1 hour. Add white radish, carrots, grilled shallots, and grilled dried squid to the pot to make the broth sweet and fragrant. Add a little salt, rock sugar, and fish sauce to the pot of broth. Skim the foam frequently to keep the broth clear.
Pre-processing and preparation of food
Wash fresh squid with a little white wine and ginger to remove the fishy smell, cut into slices if the squid is large. Blanch the squid and shrimp in boiling water for about 1-2 minutes until just cooked (keep the crunchy sweetness). Stir-fry the minced meat with fried onions and a little fish sauce.
Blanch the noodles in boiling water until soft. Wash the bean sprouts and vegetables. Then, put the noodles in a bowl. Arrange the squid, shrimp, minced meat, fried onions, and vegetables on top. Pour the hot broth over. Sprinkle with pepper, green onions, and chives.
You can eat squid noodles with chili fish sauce, satay or crushed green chili salt.
