Bitter melon is considered a 'super cooling' fruit for summer days.
To remove the bitter taste for those who are 'afraid of bitterness' but still want to enjoy the wonderful taste of this fruit, you can refer to the method of removing the bitter part if you want to reduce the bitterness of this fruit. First, wash the bitter melon before processing to remove impurities and dirt on the surface. Then, cut the bitter melon lengthwise, cut the bitter melon in half for easy processing. Use a stainless steel spoon to remove all the seeds and pulp inside the bitter melon. This is one of the main sources of bitterness in bitter melon that needs to be cleaned thoroughly.
Once you have finished removing the pulp from the bitter melon, you will need to remove the white veins – this is the most important step. Because the bitterness of bitter melon mainly comes from the bitter part inside, people often call it ‘bitter veins’. This part is located on the inner wall of the bitter melon with a thin white membrane. We use a spoon or a knife to gently scrape this part off completely.
Use a spoon or knife to gently scrape off the bitter veins.
After finishing the bitter veins, we can start slicing the bitter melon and then processing it. Bitter melon should be sliced at a 45-degree angle to increase the contact area of the bitter melon and help the bitterness escape during the cooking process. To reduce the bitterness, you can put it in a bowl, add a little salt and marinate for about 10 minutes. Salt has an osmotic effect, helping the bitter melon to secrete bitter juice. After that, you wash it to significantly reduce the bitterness. Or you can soak it in water and add a little bit to help the bitter melon reduce its bitterness.
Finally, you can process bitter melon according to your preference. Whether eaten raw or stir-fried and processed with other ingredients, it is delicious and nutritious, refreshing and helps cool down the summer heat.
