According to experts, infectious, environmental and lifestyle factors are all related to increased risk of stomach cancer. In particular, diet greatly affects this disease.
Therefore, scientists from Tianjin Medical University, Inner Mongolia Medical University, National Center for Control and Prevention of Chronic and Non-Communicable Diseases of China, Liaoning Key Laboratory of Clinical Tumor Metabolism (China) conducted a new study aimed at exploring the relationship between diet and the risk of gastric cancer.

A total of 2,468 people participated in the study, including 696 cases of stomach cancer and 1,772 controls. All participants were asked to complete a food frequency questionnaire.
There were 6 food models included in the study, including:
1. Flavor, garlic and protein model.
2. Fast food model.
3. Vegetable and fruit model.
4. Pickled foods, processed meats and soy products.
5. Non-essential food patterns include lots of junk food and carbonated drinks.
6. Coffee and milk model.
The relationship between diet and stomach cancer risk
The results found that the fast food pattern doubled the risk of stomach cancer, and the non-essential food pattern increased the risk by 60%.
Conversely, there are patterns that help reduce the risk of stomach cancer, such as the following:
Flavor, garlic and protein patterns reduced the risk of stomach cancer by 21.4%.
The pickled foods, processed meats, and soy model reduced the risk of stomach cancer by 19.6%. In this model, previous studies have shown that some types of pickles can increase the risk of stomach cancer, but soy is extremely strong in preventing stomach cancer, overriding the harmful effects of other foods.
In particular, the most prominent was the coffee and milk model, with the highest reduction in stomach cancer risk, reaching 31%, according to Frontiers .
Cheese contains lactic acid bacteria, which can inhibit the growth of H. pylori bacteria.
Why do coffee and milk have this special effect?
Experts explain: Coffee is a mixture of bioactive substances. It contains phenolic compounds and 2 lipids (cafestol and kahweol), which can prevent the development of cancer thanks to their antioxidant, anti-genotoxic, anti-mitochondrial and anti-inflammatory environmental modulation properties.
Dairy products contain several components, including vitamin D, minerals, calcium, and conjugated linoleic acid. The protective effects of these components on gastric cancer may be due to their antitumor properties.
Fermented dairy products such as cheese and yogurt contain lactic acid bacteria, which can inhibit the growth of H. pylori bacteria by producing inhibitory substances, including lactic acid and bacteriocin. H. pylori is a major cause of stomach diseases, which can lead to stomach cancer.
Consuming a lot of coffee and milk reduces the risk of stomach cancer by up to 31%.
