Grilled fish with salt and chili, rich in the taste of the sea
In the coastal areas of Binh Dinh, especially coastal areas such as Phu Cat district, Phu My, Hoai Nhon town, Quy Nhon city..., grilled salted and chili fish is a rustic dish but full of identity.

The fish here is usually small, with a long, slender body, bright red meat, firm and characteristically fragrant. When still fresh and just pulled up from the net, the fish is cleaned and marinated with a mixture of spices including minced lemongrass, ginger, onion, chili, garlic, and crushed salt. The marinating method is also very unique in this coastal region, with enough sweet, spicy, and salty flavors, but only marinate about a third of the original mixture so that the fish can absorb it lightly, the rest is used when grilling.
Binh Dinh people have a secret to grilling fish very skillfully. The fish is grilled over a slow charcoal fire, just cooked, the skin begins to turn golden brown, then the griller brushes the remaining spices on the fish. Every few minutes, sprinkle evenly, so that the spices slowly penetrate into each piece of meat, creating an irresistible aroma.
Grilled salted and chili fish is usually eaten hot with raw vegetables, rice paper and fish sauce with lemon, garlic and chili. The rich sweetness, spicy on the tip of the tongue, fragrant with lemongrass and ginger make this dish a specialty in the rustic meals full of the love of the people of the land of Nau.
