Mr. Thuong shared: The way to make Bau Da wine is the same as other handmade wines, there is no family secret. Cook rice, let it cool, fluff it up and mix it with yeast, put it in a plastic bucket to dry for two days and nights, then add water to let it ferment for another three days and nights and cook, it's that simple and it becomes wine. Perhaps Bau Da wine is more special than other places because of the water source here. During the cooking time, you have to constantly listen to the drops of wine, fast or slow, to add or reduce the heat. Because of this careful cooking method, Bau Da wine has a very rich flavor.
According to Mr. Thuong, to have a pot of delicious wine, people have to use Tri rice to cook, each batch is 5kg of rice, cook for exactly 6 hours and can only distill from 2.5 - 3 liters of wine, each day his facility produces about 10 liters of wine, depending on the number of customers ordering. Talking about the name Bau Da, Mr. Thuong said: This name originated from ancient times, it was the name of a pond of water that the whole village used for daily activities and to make wine. The water source to create the special "wine quality" is still the water that seeped from the underground stream of Bau Da in the past. Now, the pond has been filled in to form lush rice fields all year round, but the underground water from the village's wells is still clear and blue, and the wine still retains its old flavor.
