"The noodle soup recipe of the restaurant was taught by my aunt in Nha Trang, now she is old so she has to retire," Ms. Yen said.

Sharing about the process of making a hot bowl of noodle soup, Ms. Yen said that she imports most of the ingredients from Nha Trang. After the fish is brought ashore, the fish meat and bones will be separated at the estuary and transported to Ho Chi Minh City. "I will grind the meat until it is very smooth and supple, then the fish cake will be delicious. The bones will be used to make the broth, giving it a sweet taste," she said.
