Cay Trung Ca Shop in Ham Tri Commune, Ham Thuan Bac District is located along DT 714 Road, with a ca ca tree, behind it are sugarcane fields and crops. The road is deserted but the shop still has customers stopping by for drinks and snacks.
We ordered sugarcane juice and saw the owner quickly making grilled rice paper rolls, so we bought some to try. It was delicious, cheap and surprisingly good quality!
The little lady dances her hands making cakes.
While eating, ask questions, learn how to make it, it's very simple, anyone can make it but needs to be familiar. Ingredients include thin, rectangular rice paper. Spread the rice paper, brush lightly with cooking oil, butter, mayonnaise, chili sauce, and shrimp paste.
As for the shrimp paste, it is prepared according to a special recipe. Grade 1 shrimp paste, filtered, garlic, pepper, sugar, chili, pureed and stir-fried. How to keep the aroma and flavor of the shrimp paste but not strong smell.
The filling includes scallion oil, long-sliced pork roll; pickles (carrots, white radish); boiled quail eggs cut into quarters, and a little Vietnamese coriander. Place the rice paper and filling on the hot coal stove for about 30 seconds. The rice paper is thin, so the heat must be just right. If it is too old, the cake will burn and be spoiled. If it is not done yet, the cake will be tough and not tasty.
Place the ingredients on the cake and grill it over charcoal.
When the rice paper is just cooked, use long chopsticks to skillfully roll the rice paper while it is still hot and place it on a plate. If you slow down a bit, the rice paper will be crispy and the roll will break. Make it as soon as the customer orders, it is best to eat it right away.
No need for dipping sauce or adding vegetables because it is very tasty and has enough spices. The cake is hot so there is a paper lining, hold the cake and eat it right away. The cake is hot, fragrant with the taste of the countryside; crispy, sweet, slightly fatty from rice paper, ham, quail eggs; supported with scallion oil, Vietnamese coriander and chili sauce; especially the typical flavor of shrimp paste of the land of "Literature is not as good as sardine bones" so it is very strange and delicious with a rustic flavor.
Use long chopsticks to skillfully roll the cooked cake.
Finished rolled rice paper
Initially, I planned to have a snack, one roll per person, but it was too delicious, so I spent three times more than I planned. A few years ago, when I went to Sa Dec, Dong Thap, I stopped by Ba Xam noodle shop in the afternoon to eat a special bowl for 10,000 VND; added a bowl of dried squid soup for 5,000 VND, and a bottle of aloe vera for 5,000 VND. Less than 1 USD but full.
Earlier this week, I went to Binh Thuan, passed by Ham Tri commune (Ham Thuan Bac), stopped by a country restaurant, intending to have a good time and be full. Also learned how to cook. Both the food and the baking course cost less than 1 USD. It must be said that it is super cheap!
