When the family was still poor, there was not enough main meals, let alone snacks and snacks. So the day of making fried banana cakes naturally became a "big event" in the eyes of the children.

Grandma packed everything she had in the house, including sawdust for the stove, several bunches of ripe bananas, old coconut, sugar, sticky rice flour, and sweet potatoes.

After that, she started making a “tray” of fried banana cakes, nearly a hundred of them, to share with her children, grandchildren, and neighbors. While making them, she said: “The wind and rain come once a year, so fried banana cakes are the same, don’t ask for more!”. We helped her and laughed heartily, our hearts filled with joy.

Now, it is difficult to find the wood-fired stove, but I still try to adjust the gas flame to a low level to make it easier to fry the cake. I also go all over the market to find a bunch of bananas, a piece of old coconut and a kilo of sweet potatoes.

The preparation and mixing of ingredients have just been completed, the thinly sliced ​​coconut and sweet potato slices have just been mixed into the bowl of flour. Heat the pan with oil until very hot, drop spoonfuls of flour and ingredients in and fry until crispy.

When the cake is done, take it out and let it drain, sprinkle some sesame seeds to “decorate”. Finally, enjoy. The first bite of the cake will immediately feel the crunchiness of the cake, the soft sweetness of the banana mixed with the fatty flavor of the coconut.

Looking at my children eating the crispy golden cake in the small kitchen, I remember my old image. On a rainy day, there is nothing better than eating fried banana cake. While eating, we exclaimed, then told each other stories about school and class. Childhood stories followed the rhythm of the rain falling outside the window.

Life is busy nowadays, it is not difficult to find fried banana cake at street stalls or in the market. But the taste of the old days can only be found in fried banana cake in the family kitchen!
