1. Sea worms

Ancient people considered sea worms (Sipunculus nudus) one of the famous specialties of Quang Ninh province. Sea worms can be used as a substitute for MSG. When used in broth-based dishes such as pho or vermicelli, sea worms give the broth a particularly sweet and delicate flavor.

Sea worms (Sipunculus nudus) are quite expensive. At times, the price of 1 kg of this "sea worm" is equivalent to one tael of gold. Sea worms can be prepared fresh or dried. Depending on the preparation method, this ingredient, considered as precious as gold, always satisfies diners in every dish.

2. Bored

Ngán (a type of shellfish) continues to be a specialty from Quang Ninh, captivating many with its delicious and nutritious flavor.

Ngán is a type of seafood that resembles a clam but is larger and is only found in the waters of Quang Ninh province because it is currently not possible to farm it anywhere else.

The price of razor clams is several tens of times higher than that of common clams (approximately 600,000-800,000 VND/kg). Razor clams are considered highly nutritious and suitable for health enhancement. They can be prepared in many different dishes such as razor clam porridge, grilled razor clams, and razor clam wine, but the most delicious and iconic specialty of Ha Long is razor clam noodle salad.

3. Dong Tao Chicken

Dong Tao chicken, also known as Dong Cao chicken, is a rare and endemic breed found only in Hung Yen province . Its most distinctive feature is its unsightly legs – large and thick, reaching weights of over 4.5 kg and over 3.5 kg when fully grown. Besides its delicious meat, the special characteristic that makes this breed so expensive is its legs. The larger the chicken's legs, the more valuable it is.

This type of chicken sells for a very high price on the market, around 1-1.5 million VND/kg.

4. Nine-toed chicken

For a long time, this breed of chicken has been known as a rare and precious breed in Vietnam. Legend has it that in the past, the nine-toed chicken was a tribute offered to the emperor and is also associated with the legend of Son Tinh and Thuy Tinh. Today, the nine-toed chicken thrives best in Tan Son ( Phu Tho province ). The price of a nine-toed chicken is many times higher than that of ordinary chickens.

During Tet (Vietnamese Lunar New Year), the price of chicken can range from 600,000 to 1 million VND. However, apart from a few rare purebred nine-spurred chickens, no one has yet successfully bred this type of chicken. Nevertheless, consumers still accept buying hybrid chickens with 6, 7, or 8 spurs for ancestral offerings. Chickens with 5-6 spurs are priced from 400,000-500,000 VND/kg. Those with 7 spurs cost 900,000-1 million VND/kg. Eight-spurred chickens, fit for royalty, can cost 2-3 million VND/kg. The most special breed with all 9 spurs can fetch up to 9,990,000 VND per pair.

5. Parrotfish

The Anh Vu fish, also known as the King's Fish, is one of Vietnam's most famous fish species due to its rarity and delicious taste. This fish is very picky, only eating algae and living in clear water; unlike many other fish that eat a variety of foods, many people consider it a symbol of luxury.

Since ancient times, this fish has been known as "the finest fish of Van Lang" and was among the top products that had to be offered as tribute, so it's no surprise that the Anh Vu fish commands such an exorbitant price.

The price of the snakehead fish also depends on its weight. Specifically, snakehead fish weighing 2kg or less cost 1.4 million VND, while those weighing 5kg or more cost 1.6 million VND. Just as the value of Dong Tao chickens or nine-toed chickens lies in their legs, the wide mouth, also known as the "pig's snout," of the snakehead fish is the part that commands the most price and effort from connoisseurs.

This fish is a river delicacy, commonly found in the upper reaches of the Red River, Ky Cung River, and Lam River systems (in the provinces of Yen Bai, Phu Tho, Hoa Binh, Lang Son, and Nghe An)...

6. Triggerfish

Because the fish's beak is very long and tubular, and its mouth flares out like the mouth of a lime pot, fishermen named this species of fish "lime pot beak."

The triggerfish, also known as the sea dragon or spearfish, has bright red skin and an elongated body resembling an eel, but it's not as slippery or slimy. Adults can reach up to a meter in length and weigh around 1 kg. Currently, there is no consensus on the origin of this species. However, triggerfish live in swirling waters at the confluence of the Saigon and Dong Nai rivers, an area known as the "tea" zone because it contains both saltwater, brackish, and freshwater currents. Currently, the natural population of triggerfish in the Nha Be River has become scarce due to overfishing by local fishermen.

The triggerfish is a prized seafood delicacy, sought after by connoisseurs at prices ranging from 1 to 1.3 million VND. Due to overfishing, this type of fish has become scarce, and its price has steadily increased. However, the scarcer it becomes, the more people are willing to spend money to enjoy it.
